I just love okra! It’s kind of a funny vegetable, but it’s a Southern staple, especially during the last days of summer. A nice batch of fried okra always takes me back to my college days of living in the sorority house and having fresh okra with dinner. This recipe is extremely simple to make and is a favorite for even the pickiest of eaters. Enjoy!

- 10 pods okra, sliced in 1/4 inch pieces
- 1 egg, beaten
- 1 cup cornmeal
- 1/4 tsp sea salt
- 1/4 tsp ground black pepper
- 1/2 cup vegetable oil
In a small bowl, soak the okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in the hot oil, stirring continuously.
Reduce the heat to medium when the okra first starts to brown. Cook until golden and drain on paper towels. Serve immediately!
